Quarantine Mushroom ‘Burgers’ —easy and delicious!

Gluten-free, vegan, can be made grain-free

These don’t look all that appealing, but trust me, they are amazing! And so easy.

–1 package shitake mushrooms

–1 package button or other mushrooms (your choice)

–Oatmeal flakes or a gluten-free flour (enough to make the mix a little firmer)

–A few small scallions or one large leek (or a mix of both)

–Salt and pepper to taste

Add all ingredients to a food processor or blender (the former works better), blend for about a minute.  Throw mixture in a hot pan and try to form burgers.  If the consistency doesn’t work for burgers, eat in lettuce leaf wraps or gluten free wraps.  Serve with some cucumber slices, or a side of fruit. 

Some notes:

  1. We used a local Austrian variety of mushroom called Kräuter Seitling as well as shiitake mushrooms but you can play around with different types.
  2. Can use in lettuce leaf wraps if you aren’t able to form burgers due to the consistency.  (For example, if you leave out the oatmeal).
  3. Could add an egg replacement (or eggs) for better consistency.

  1. I Really enjoy mushrooms so will definitely try this recipe I If I wanted to actually make a burger any suggestion for-binding it together without ruining the heathyness?

    • Yes. The first time we made them, we used oatmeal in it, and they bound together better (although not pictured). Or you could use a gluten-free flour like coconut flour, chickpea flour, rice flour, etc. But you can eat gluten so regular flour would work. Let me know how it goes!
